We're Shannon and Chase, and today we're thrilled to share a cherished part of our family's Christmas tradition with you – our much-loved Egg Casserole.

Every Christmas morning, before the excitement of opening gifts, our family gathers around the breakfast table to enjoy this special dish. It's more than just a meal for us; it's about celebrating family bonds and creating warm memories.

This year, we're excited to add a twist of veggies and cheese to our classic recipe. And yes, even amongst all the Christmas morning excitement, this is one tradition we always make time for because it's simple, delicious, and brings so much joy.

Recipe: The Willardsons’ Egg Casserole

Prep Time: 15 minutes | Cook Time: 50 minutes 

Ingredients

For the breakfast casserole base:

  • 10 Eggland’s Best eggs, large

  • 2 cups grated cheddar cheese (or cheese of choice)

  • 6 slices bread cut into 1-inch-wide cubes

  • 2 cups milk of choice (regular milk and almond milk work best)

  • Salt and Pepper to taste

For the additions:

  • Any veggies you want!

  • 1 cup corn kernels, cooked or frozen

  • 1/2 cup chopped broccoli, cooked or raw (raw will turn out crunchier)

  • 1/2 cup sliced mushrooms

  • 1/4 cup sliced green onions

  • 1 cup cubed ham and/or cooked Italian sausage

  • 3 slices cooked bacon, chopped

  • 1 teaspoon dried or fresh herbs, (such as basil, rosemary, or thyme)

  • 1/4 to 1/2 teaspoon cumin or curry powder (optional)

Directions

  1. Preheat the oven to 350°F.

  2. To make the casserole base, beat the eggs in a large bowl. Mix in the milk and cheese. Add the bread and stir until all pieces of bread are moistened.

  3. Next, add the additions. If you have a lot of additions, you might need a couple more eggs to make sure that everything is touching some egg mixture. Whisk in 2 tablespoons of milk for every beaten egg you add.

  4. Time to bake the casserole! Butter a 9x13-inch casserole dish. Pour the mixture into the casserole dish.

  5. Bake in a 350°F oven for 50 minutes to an hour, until the top is browned and the center springs back when touched.

  6. Remove from oven and let cool for 10 minutes before serving.
